
Triple chocolate brownie
This chocolate brownie recipe is from my first cookbook, At My Table. Who doesn’t love a good brownie? They’re fabulous not only for the obvious reason (i.e they’re loaded with gorgeous chocolate), but also because they’re so quick and easy to whip up. I kicked the chocolate quotient up a notch with this one, I like getting chunky chocolate pieces when I take a bite. You can either slice the brownie into pieces, or serve it on a platter whole, pile on whipped cream, chocolate sauce and fresh berries and devour it as a dessert.
Ingredients
100g butter
1 cup sugar
2 free-range eggs
1 tsp pure vanilla essence
¾ cup plain flour
1 tsp baking powder
½ cup good-quality cocoa
100g good-quality white chocolate, cut into small chunks
100g good-quality dark chocolate, cut into small chunks
3/4 cup roasted macadamia nuts (optional)
Icing sugar to dust (optional)
Whipped cream and berries to serve (optional)
Method
Preheat the oven to 180c conventional. Grease a slice tin, and line the base with baking paper.
Melt the butter in a saucepan over a medium heat. Remove from the heat, and whisk in the sugar. Add the eggs and vanilla essence, and whisk to combine. Sift the flour, baking powder and cocoa into the mixture, add the white and dark chocolate chunks, and nuts (if using), and very gently fold with a wooden spoon or spatula until just combined. Pour the mixture into the prepared tin.
Bake in the oven for about 15-20 minutes then test with a skewer. These brownies are done if the skewer still has a little of the mixture clinging to it. Remove from the oven and cool in the tin before slicing. Store in an airtight container for a week.

These are my favourite brownies to make by far! We currently don’t have any cocoa though and it was sold out in the supermarket… Could I add more of the chocolate, melted? Or more flour and chocolate?

This brownie is EPIC! Making amazing brownie has been on my ‘baking bucket list’ and Chelsea, you’ve helped me tick it off the list! I’ve tried other recipes and they just don’t compare!
The only discrepancy I’ve found is your note that it lasts up to one week in a container… it’s yet to last long enough to test that theory! HA!

Divine! Was craving something sweet and because I didn’t have anything at home I decided to make Chelsea’s brownie even with no chocolate in it. Just added heaps of almonds and it definitely hitted the spot! Sure will make again with all ingredients!

I need to make a few baking items and want to make this and your delicious Oaty Ginger Slice but am short on time. Will storing this in the fridge for three days change the taste/texture at all or once its back to room temp for serving will it still be just as good as fresh?

This is my absolute favourite brownie recipe – and I have tried a fair few! Was wondering if it would be possible to freeze the batter raw, so that I can get it out and bake it when convenient? Or is it better to bake and freeze the finished product?

This is a fanastic recipe – I love mixing it up – hacked up all the remaining uneaten Cadbury Favouites from Xmas and chucked them in – good different tastes throughout – now back to a Moro bar to give it a 2nd layer of chewyness – mmmm

Chelsea I made the mistake of posting a double batch of this to my son and his mates at uni hall of residence. It travels very well in an ice cream container! I always make these love them perfect every time this batch I added a table spoon of Greek yogurt just to see what happens hopefully it will work out about to put them in the oven now my 6 year old is inlove with these

I’ve made these twice (just in the last week). I added thawed frozen raspberries which were still a bit moist and turned out fine. A little cakey (I prefer my brownie more on the dense side) but yummy. I also used whittakers dark chocolate with almonds. So goooood! Thank you very much for sharing, Chelsea x

Soooo this is the brownie mixture i usually always use and they are just perfect! I had oreo cookies to use up so i thought id google a brownie reciepe for them….. Boohoo BIG mistake!!! I should have known better than to stray from this 100% winning Recipe, and just added oreos to it. So il sit here sobbing into my dry crappy un forfilling brownies wishing they were chelseas. kicking myself ?

Hi Chelsea, thank you so much for this recipe, it’s now one of my go-to’s when I need to whip up something in a hurry that’s going to impress. I just started a new job last week so baked these for my workmates, (nothing like a little bribery right?) The boys were stoked, and are already asking when the next batch is coming!
Delicious! Come out not too dry – not too doughy. First brownies I’ve ever made and they were a hit in my house. Definitely my go to recipe for brownies from now on. Also used gluten free flour for this. I used white chocolate buttons in the mixture and they didn’t fully melt so when they were cut into squares its very noticeable and chocolatey which everyone loved.

If you are doubling the recipe would you double the cocoa because there are recipes that are similar but all the other ingredients are doubled and the cocoa is kept 1/2 ?

I haven’t done this before but if you do I think you need to thaw them and drain them first!
Kristina ,just to let you know that I have baked brownies for years ( my recipe is pretty much identical) and often throw in frozen berries. Works best just scattering them over before they go in oven to lessen the chance of them breaking up – but has always worked for me :)
