Lamb burger

These tasty homemade lamb burgers wipe the proverbial floor with anything a fast food joint can flop out. They’re quick, easy and just delectable. Pretty healthy too, if that’s your vibe.

You really should make these, because a) if you do, everyone will love you for it and b) I want you to discover how incredibly tasty lamb can be when it’s slapped between two burger buns. Enjoy with a cool beer on a hot day!

Patties
500g lamb mince
½ tsp ground cumin
1/2 tsp paprika
1 egg, lightly beaten
½ slice bread soaked in 2 tbsp milk
1 clove garlic, finely chopped
2 tsp rosemary, very finely chopped
Zest of 1 lemon
½ onion, finely chopped
½ tsp salt
¼ tsp chilli powder (optional)

Mayo
½ cup mayonnaise
¼ cup feta, finely chopped
2-3 tbsp fresh mint leaves, very finely chopped
1 clove garlic, finely chopped
2 tbsp parsley, very finely chopped
2 tsp lemon juice

Toppings
Grilled haloumi slices, or smoked cheddar
Ripe tomatoes, cored and sliced
Red onion rings +lemon juice
Cucumber, sliced
Lettuce
Tomato relish
Ciabatta or burger buns, buttered and lightly grilled

Place the onion rings in a bowl, squeeze a little lemon juice over and a pinch of salt, Toss to combine. Set aside for 10 minutes, drain and shake dry. This makes it less bitter and improves the texture.

Add the lamb, cumin, egg, bread, paprika, garlic, rosemary, onion, salt and chilli and some cracked pepper to a bowl and mix until well combined (use your clean hands, it’s easier). Shape the mixture into 4 patties, cover and refrigerate for 15 minutes to set them.

Mix the mayonnaise, mint, parsley, garlic, feta and lemon juice until well combined. Taste and season with salt and pepper.

Heat a little olive oil on a BBQ at a high heat (or a pan). Cook the patties until browned on the outside and medium/medium well on the inside. Assemble your burgers and dig in!

PS –  I showed my friend Dave McGibbon this photo for critiquing, and he said there’s no way you could eat it with your hands without getting messy, and because of that he wouldn’t want to eat it. Hmm. There’s just no pleasing some people. But perhaps you agree? Let me know….
